We co-fermented heritage Salt Spring Island apples with Gamay grapes from a few vines that a friend of the cidery grows in his garden here on the island. At about 95% apple and 5% grape, there’s just enough of the Gamay to impart some nice tannic and vinous notes, but the lighter body and flavour of the cider can still shine through.
